is there any way to retro-fit 2 6 x6 posts into footings underneath my deck stairwell stringers?

My stringers as well as my composite treads and risers are already in place for my deck stairwell. The stringers are 12' long without any posts for support from the landing to the concrete pad. The stairwell is fairly solid but has a very slight bounce towards the middle of the stairs (stringers) while walking down. Can I retro-fit some 6 x6 posts with concrete footings below those stringers to solidify the stairs. If so, how would I get any post-hole digger underneath those stringers...Will I have to muscle out 2 holes with a spade since there's hardly any room??

If you remove a few treads in the middle of the stairs, that will give you some better access from above. Consider using a post hole shovel for digging out the holes (probably not worth buying, but certainly renting one for an afternoon would suffice). This is a manual shovel specially designed for digging deep holes - it has a hinged blade and two handles.

You could also consider adding some extra supports to the stringers. You could "sister" additional lumber underneath or alongside the stringers, such as a 2x8. Another approach would be adding a brace (or pair of braces) from the center of the stringers, back down to the base of a deck post, if there is one suitably closeby.
